Procedure
- Toast cloves, blanch and toast almonds, and peel and chop 1.5 oz (by weight) of fresh ginger.
- Combine rum, lime zest, cloves, almonds, and ginger is a sealed jar and soak for 24 hours.
- Strain through cheesecloth or brew bag.
- Add almond extract, simple syrup, and lime juice. Bottle and shake to incorporate.
